Move over mashed potatoes, the best holiday potato side dish is here. These classic Au Gratin Potatoes are creamy, cheesy, and baked to perfection on the Pit Boss. Layers of thinly sliced potatoes, cream sauce, and cheese are piled high for the ultimate addition to your holiday meal. While it may look and taste like this dish took some effort, your guests will never know it took no time to throw together.

Ingredients

  • 5 lb. Yukon potatoes
  • 3 cups heavy cream
  • 1 cup whole milk
  • 2 Tbsp Salt
  • 1 Tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Pepper
  • 3 cups shredded parmesan cheese
  • 1 cup shredded parmesan cheese, for topping

Special Tools

  • Oven-safe casserole dish
  • Mandoline

Directions

  1. Preheat your Pit Boss Grill or smoker to 275°F
  1. In a mixing bowl add cream, milk, salt, garlic and onion powder, and pepper.
  1. Using a mandoline, cut the potatoes into paper-thin slices and add into the cream mixture.
  1. Add 3 cups of shredded parmesan cheese to potato mixture, and mix well.
  1. Use nonstick spray to coat your Dutch oven or oven-safe casserole dish.
  1. Evenly distribute the potato and cream mixture into your Dutch oven. Note: you want the cream to be just below the potatoes. You may not need all of the cream mixture.
  1. Top mixture with 1 cup shredded parmesan cheese.
  1. Cover with lid or foil and bake in the Pit Boss at 275°F for 1 hour.
  1. Uncover potatoes and raise the grill temp to 325°F to brown the top.
  1. Remove from grill and let rest for a half hour.
  1. Enjoy with friends and family!
