This creative spin on an Irish Classic is perfect for celebrating St. Patrick's Day. Traditional Corned Beef is paired with Swiss Cheese, Sauerkraut, and Thousand Island in this cheesy and delicious Reuben Dip recipe.

Ingredients

  • 8 oz softened cream cheese
  • 14 oz coarsely chopped deli corned beef
  • 1 cup shredded swiss cheese + 1/2 cup for topping
  • 2/3 cup sauerkraut, drained well
  • 1/3 cup sour cream
  • 1/3 cup Thousand Island salad dressing
  • Triscuit crackers or rye chips for serving

Directions

  1. Preheat your Pit Boss® Grill to 350°F
  1. Place all ingredients in a Pit Boss cast-iron skillet, or other oven-safe container. Reserve 1/2 cup of swiss cheese for topping.
  1. Place the skillet on the grill and bake for 20 minutes, stirring every 5-7 minutes.
  1. In the last 5 minutes, sprinkle the remaining shredded swiss cheese on top of the Reuben dip.
  1. Remove from the smoker when it begins to bubble and the top is lightly browned, and serve with crackers or chips.
  1. Enjoy!
