Smoked Applewood Bacon Mac and Cheese

This smoked mac and cheese goes a step further adding Applewood bacon into the mix for a truly delicious side that pairs with just about any meat. Or eat it on its own for a hearty lunch or snack. You really can't go wrong with pellet grill mac and cheese

Ingredients

  • 1 box elbow noodles
  • 2 tablespoons all purpose flour
  • 2 tablespoons unsalted Butter
  • 1 tablespoon Pit Boss Applewood Bacon Seasoning
  • 1 Cup Shredded Cheddar Cheese
  • 1 cup whole milk, warm
  • 4 strips cooked bacon, crumbled
  • Green onions, sliced, optional

Directions

  1. Cook the pasta according to package instructions. Drain.
  1. In a skillet, melt the butter over medium low heat.
  1. When the butter is melted, whisk in the flour and cook until the mixture smells toasty and looks like wet sandy, about two minutes.
  1. Slowly pour in the milk, whisking constantly, and let cook for 5 minutes until thickened, whisking constantly.
  1. Remove from heat and whisk in the Limited-Edition Pit Boss Bourbon Apple Rub and shredded cheddar cheese until you have a smooth cheese sauce.
  1. Turn your Pit Boss Grill onto the smoke cycle and smoke your macaroni and cheese for 25 minutes.
  1. Remove from grill, top with green onions if desired, and serve.
