Try enhancing the flavor of your olive oil by adding a touch of smoke. This Smoke Infused Olive Oil uses a method called cold smoking, during which the temperature is kept at or below 80°F. This process infuses your olive oil with a smoky flavor without heating it up. For a bolder flavor, fuel up with hickory or mesquite wood pellets, or choose a fruitwood like apple for a milder flavor. We recommend using good quality extra virgin olive oil for best results.

Directions

  1. For cold smoking, the temperature must be 80°F or below, so we recommend using a Pit Boss smoke tube on your grill. Fill the smoke tube with your choice of pellets, light, and place on the grill.
  1. Transfer olive oil to a large shallow pan or baking dish and place on the grill.
  1. The amount of smoke time depends on your flavor preference. Try cold smoking your oil for approximately 20-40 minutes. For a stronger smoke flavor, you can return the oil to the smoker until it’s reached your desired flavor.
  1. You can add in some of the remaining olive oil that you set aside at this point if you find the smoky flavor is too strong.
  1. Store in a sealed container until ready to use.
