An easy yet delicious smoked take on this New England classic that combines the delicious flavor of lobster with the amazing flavor of Pit Boss pellets. Finished with a homemade sauce that's easy to take on the go!

Ingredients

  • 2 lobster tails (one tail per roll)
  • 2 sticks of butter (1 cup)
  • 1 Tbsp Smoked Paprika
  • Fresh Dill
  • zest of 1 Lemon
  • 2 cloves minced garlic
  • 1/2 cup sriracha
  • 1/2 cup mayo

  • Small saucepan

Directions

  1. Remove lobster tails from the shell and smoke at 225°F for about an hour or until the internal temperature is 120°F.
  1. Once the internal temp is 120°, make a butter sauce by placing the butter, paprika, dill, lemon zest, and garlic in a small saucepan over medium heat:
  1. Remove lobster, chop and toss in butter sauce, then return to the smoker for about 5-10 minutes.
  1. Mix together equal parts sriracha and mayo.
  1. Remove lobster from the smoker, put in a top-sliced bun and top with sriracha mayo and parsley. Enjoy!
