Ingredients

  • 1 large head of cauliflower, fresh
  • 3 tbsp avocado oil
  • 2 tbsp yellow curry powder
  • 1/4 cup butter
  • 1/4 cup crushed cashews
  • Chopped parsley for garnish

Special Tools

  • Oven-safe sauté pan

Directions

  1. Preheat pellet grill to 400°F
  1. Cut or break apart the cauliflower into equal-sized pieces. Place in medium size bowl and toss with oil and curry powder.
  1. Place sauté pan in the center of the lowest grill grate and preheat for 2-3 minutes.
  1. Add butter to coat the pan, then add cauliflower pieces.
  1. Open the sear plate for a direct flame and stir the cauliflower every couple of minutes.
  1. Once the cauliflower is golden brown, close the sear plate and move the pan off to the side. Close the grill lid and cook for another 2-3 minutes.
  1. Plate the cauliflower and top with crushed cashews and chopped parsley.
