Ingredients
Chicken wings
1/3 cup brown sugar
1/3 cup low sodium soy sauce
1 tbsp Gochujang
1 tbsp toasted sesame seed oil
1 tbsp fish sauce
2 tbsp garlic, minced
Special Tools
Cast Iron Skillet
Directions
Preheat your wood pellet grill to 300°F
Pat the chicken wings dry with paper towels. Season with Pit Boss seasoning if desired.
Place the wings directly on the grill grates and smoke until they reach an internal temperature of 165°F.
While the wings are smoking, combine the brown sugar, soy sauce (or tamari), Gochujang (or Sambal Oelek), sesame oil, rice vinegar, fish sauce, and minced garlic in a saucepan. Simmer over low heat until the sauce thickens slightly, about 5-7 minutes.
Once the wings are smoked, increase the temperature of the grill to 400°F. Heat the cast iron skillet on the grill grates and sear the wings for 2-3 minutes per side until crispy.
Remove the wings from the grill, toss them in the prepared Korean sauce.
*For extra crispness place back onto the grill with the grate open to finish the cook.
Finish by sprinkling on some sesame seeds and green onions.
