  • 4 oz. pineapple juice
  • 2 tbsp. apple cider vinegar
  • 2 tsp. salt
  • 1/4 tsp. cumin
  • 2 tsp. dried oregano
  • 1/2 cup canola / vegetable oil

Directions

  1. Add the Achiote paste, pineapple juice, vinegar, salt, cumin, oregano, and oil to a blender, and blend until smooth to create your marinade.
  1. Then, in a large bowl, coat your wings with the freshly blended Al Pastor Marinade. Once your wings are fully coated, cover, place in the refrigerator, and let rest for 6-24 hours.
  1. Next, preheat your Pit Boss® Grill to 300°F, and place your wings on the top rack to roast. Turn the wings every 10-12 minutes until the internal temperature reaches 170°F
  1. When your wings have reached their desired internal temperature, remove them from the grill, and garnish with grilled pineapple, parsley, and pickled onion.
  1. Enjoy!
