Ingredients

  • 1 Cup Mayo/Kewpie
  • 1/3 Cup Seasoned Rice Vinegar
  • 1 Tbsp Poppy Seeds
  • 1 Cup Finely Shredded Green Cabbage
  • 1 Cup Finely Shredded Purple Cabbage
  • 1/2 Carrot Finely Shredded
  • 2 Julianne “No Seed” Jalapenos
  • 2 Buns of choice
  • Butter for toasting the buns
  • 10 oz. leftover pulled pork

Directions

  1. In a medium bowl, combine mayo, seasoned rice vinegar, and poppy seeds, mix until combined, then set aside.
  1. Then, in another bowl, combine green and red cabbage, carrot, and jalapeno. Add ¼ cup of the dressing mixture and allow to sit for at least 10 minutes.
  1. Meanwhile, heat your Pit Boss 3-Burner Ultimate Griddle to medium-low heat.
  1. Place leftover pulled pork on the griddle and heat until slightly crispy.
  1. While your pulled pork is heating up, toast your bun with butter to golden brown.
  1. Finally, remove your pulled pork and bun from the griddle and build your sandwich: Spread BBQ sauce on the bottom bun, then add pulled pork, more BBQ sauce, ½ cup coleslaw mixture, and the top bun to close it off.
  1. Enjoy!
