1. Remove membrane from ribs (optional).
2. Apply mustard as a binder for the rub and spread on ribs.
3. Season ribs liberally with Pit Boss Sweet Rib Rub.
4. Put ribs back in the fridge for 2-4 hours.
5. 30 minutes before cooking the ribs, turn the smoker on to 250°F and remove ribs from the fridge.
6. When the smoker has reached 250°F place the ribs in the smoker for 1.5-2 hours, when the rib begins to look dry begin spritzing with apple juice.
7. Continue spritzing with apple juice every 30-45 minutes for the remainder of the cook.
8. When the ribs are almost done, apply a light glaze of Pit Boss Memphis Hickory & Vinegar BBQ Sauce and continue cooking for 15-30 minutes.
9. The ribs are finished when they bend without breaking (about 4.5-5 hours).
