Ham, Egg, and Cheese Burrito

If you always end up with an abundance of leftovers after the holidays, this recipe is for you. Hang on to that leftover ham and use it for Ham, Egg, and Cheese Burritos instead. This change up in flavor transforms your leftovers into something completely new that the entire family will enjoy!

  • 2 flour tortillas
  • 6 Eggs
  • 1 cup leftover ham
  • 1/3 cup cheddar cheese
  • 1/2 cup Oaxaca cheese


  1. Turn griddle on and set to medium high heat.
  1. Once the griddle is ready, warm up the leftover ham and scramble eggs on the cooktop, seasoning with the Pit Boss rub.
  1. Mix the ham and eggs together once both are fully cooked. Then, sprinkle cheddar cheese over the top.
  1. Heat up tortillas on the griddle and set aside.
  1. Divide the egg, cheese, and ham mixture between the tortillas and wrap them into burritos.
  1. Before digging in, place a layer of Oaxaca cheese onto the griddle to melt. Then, place the burrito onto the cheese so it sticks to the outside of the burrito.
  1. Let burrito rest, then enjoy!
