Crunchy, cheesy, and easy, this Frito Pie recipe is great for weeknight meals and game day celebrations alike! This wood-fired recipe features simple ingredients that will have your friends and family coming back for more.

  • 2 lb. large dice pork tenderloin
  • 1 medium yellow onion, small diced
  • 6 garlic cloves, chopped
  • 10 fire-roasted hatch chiles, peeled with no seeds
  • 1/4 cup all-purpose flour
  • 1/4 cup butter
  • 1 bunch chopped cilantro
  • 2 Tbsp Dried Oregano
  • 1 qt chicken or pork stock
  • 1 Tsp Cumin
  • 1/2 tsp Coriander
  • 2 Tbsp Salt
  • 1 can fire-roasted tomatoes, drained and lightly rinsed
  • 1 bag of Fritos
  • Shredded smoked cheddar cheese - for garnish
  • Pickled onion – for garnish

  1. Preheat your Pit Boss grill to 275°F
  1. Once your grill is up to temp, place an empty Dutch oven directly on the grill grates to heat up.
  1. Next, mix flour with diced pork, then melt butter in preheated Dutch oven. Add diced pork and sauté until pork is light golden brown.
  1. Once you have sautéed your pork, add the garlic and onion, then reduce the heat to medium and sweat the vegetables until they are translucent in color.
  1. Next, add the stock, cilantro, oregano, cumin, chilies, coriander, and canned tomato, then reduce the liquid by half before removing from the heat and seasoning with salt.
  1. Finally, serve over a bed of Fritos and garnish with smoked cheese and pickled onion.
