Ingredients

  • 5 lb. boneless pork loin
  • 3 Tbsp Dijon Mustard
  • 1/2 oz. chopped rosemary
  • Salt and pepper, to taste

Directions

  1. Preheat your Pit Boss grill to 350Ā°F
  1. Rub your pork loin with Dijon mustard as a binder, then season with salt and pepper. Add your chopped rosemary last.
  1. Place your pork loin inside your grill and cook until it reaches an internal temperature of 135-137Ā°F. This should take about 25-30 minutes.
  1. Remove your pork loin from the grill and allow to rest for 10 minutes.
  1. Slice the loin into 1/4-1/2 inch thick slices, serve, and enjoy!

ā­Pit Boss Pro Tip: In this recipe, we recommend lightly scoring the pork loin before seasoning it. In general, it's best to score the areas that have fat, in order for it to render well. Since pork loin is a lean meat, you don't need to cut very deep; we recommend scoring no deeper than an 1/8 of an inch.
