To achieve a crispy chicken skin, pat skin dry and apply kosher salt to both sides of the chicken, leave in the refrigerator to dry out on a wire rack at least one hour prior to cooking.
Before cooking, prepare the potatoes and carrots by seasoning with Olive Oil, Salt, and Pepper.
Preheat the smoker to 350°F.
Season both sides of chicken with Pit Boss Sweet Rib Rub.
Place chicken, potatoes, carrots, Rosemary, and Thyme in Cast Iron Pan.
Place cast iron pan in smoker and cook for 2.5 to 3 hours until chicken is done (165°F) and potatoes are fork tender.
