Take breakfast to the next level with sweet or savory pancake bites! Stuff these bite-sized pancakes with either sweet, bananas seasoned with brown sugar, or savory sausage seasoned with our GSP Rub.

Yummy pancakes with berries and powered sugar on top

Ingredients

  • 1 Banana
  • Pancake mix
  • Syrup
  • 1/2 cup blue berries
  • 1/2 cup raspberries
  • Whipped cream
  • 1/4 cup Candied pecan
  • 1/2 cup brown sugar
  • 1 cup milk
  • 2 eggs
  • 1 stick (or 1/2 cup) butter
  • 1/4 cup powdered sugar
  • For Sausage pancakes
  • Pork sausage 8oz

Directions

  1. Turn griddle on and set to a medium heat
  1. Let us get ahead and make a batch of our pancake batter. Follow the steps on the box. Set your batter aside for now.
  1. If you are doing sweet: get our banana and slice into ½ inch coins. Toss some butter onto our griddle. Set a few banana slices onto the griddle with some brown sugar sprinkled on each side. Cook on each side for a couple minutes or until the brown sugar caramelized on each side.
  1. Now that our banana is ready let us pour some batter onto our slices of banana until fully coated. Cook on each side for a few minutes until batter is fully cooked.
  1. If you are going for salty: get your pork sausage out and portioned into 1 oz small patties, then tossed onto the griddle with some butter. Cook each side for a couple minutes seasoned with some Pit boss GSP Rub.
  1. Remove all the pancakes from the griddle and place on a plate. Garnish with berries, candied pecan, powdered sugar, and drizzle with syrup. Enjoy!
