Ingredients

  • 2 lb. russet potatoes, skin on
  • Oil
  • 1/4 lb. butter, softened
  • 1 Boursin cheese, room temperature
  • 1/2-1 cup whole milk, warmed
  • Salt and pepper, to taste
  • Chives, finely chopped

Directions

  1. Preheat pellet grill or smoker to 300°F.
  1. Rinse and scrub the potatoes. Pat dry, then coat with oil and salt.
  1. Place the potatoes directly on the upper rack of your grill or smoker and bake until fork tender.
  1. Once fully cooked, remove from grill and peel immediately.
  1. Place potatoes in a large mixing bowl and add butter, 1/2 cup warmed milk, and cheese.
  1. Using a whisk, whip the potatoes. Add more milk or butter until preferred consistency is reached and season to taste.
  1. Top with chives and serve immediately.
