Spicy and smoky, these bacon-wrapped sausages are perfect for your next tailgate, at-home game day, or backyard BBQ. Serve them up with your favorite toppings, or let your guests dish it up buffet-style for the ultimate barbecue experience.

Substitue the Firecracker brats with the Johnsonville Original or Cheddar sausages and leave out the diced jalapeños for a milder grilled link that's still full of that precious, wood-fired flavor.

Ingredients

  • 10 Johnsonville firecracker hot links
  • 2 cups shredded smoked white cheddar cheese
  • 4 diced jalapeños (no seeds)
  • 10 slices of bacon
  • 10 hot dog buns
  • Fried onions
  • Best Foods “Creamy Chili Honey Sauce” or spicy mayo of choice

Directions

  1. First, split each sausage link down the center, butterfly open, then set aside.
  1. Next, mix the cheese, jalapeños, and Pit Boss GSP Rub together in a bowl.
  1. Stuff each sausage link with the cheese mixture and place in the freezer until firm. Make sure the mixture doesn’t freeze.
  1. Next, wrap each link with a piece of bacon, securing each side with a half toothpick to hold the bacon in place.
  1. Refrigerate the bacon-wrapped sausage links and preheat your Pit Boss to 450°F
  1. Place links on the center rack of your grill and drop the grill temperature to 300°F
  1. Close the grill lid, and cook the sausage links until they reach an internal temperature of 160°F
  1. Once the correct internal temperature has been reached, remove the sausage links from the grill and allow to rest for 5 minutes.
  1. Finally, remove the toothpicks that were holding the bacon in place, and serve in a hot dog bun with sauce and crispy onions.
  1. Enjoy!
