This grilled zucchini is easy to make, and pairs perfectly with just about everything you'll be throwing down this summer!

Grilled zucchini and Pit Bos GSP Rub


  • 2 Medium Zucchini, Sliced 1/4 Inch Thick
  • 1 tbsp Extra Virgin Olive Oil
  • 1 Tbsp Red Wine Vinegar
  • 1 Tsp Dried Parsley
  • 1 Tsp Dried Basil


  1. Set grill to 350°F with the sear plate open. In a large bowl, toss zucchini with oil, red wine vinegar, parsley, basil, and Pit Boss GSP Rub.
  1. Once grill is hot use tongs to place zucchini on grill. Cover and cook, 2 to 3 minutes. Flip and continue cooking on high, covered, 2 to 3 minutes more
  1. When zucchini is tender, remove from heat, taste for seasoning and adjust as needed and eat right away.
