Next time you're craving a juicy grilled burger, try your hand at some homemade brisket burger patties to take your backyard BBQ to the next level. Kara @ScaleAndTailor shows us how she crafts her mouthwatering hamburgers at home for an elevated grilling experience just in time for summer. 

Cooking method: Kara @ScaleAndTailor likes to grill her patties on low (250°F) for extra smoky flavor and color, but recommends you set your grill to 450°F if you prefer a hot and fast grilled burger.

Ingredients

  • 3-4 lb. brisket, with full fat
  • Parmesan cheese
  • 4 Cloves Garlic, Minced
  • 1 tbsp Italian seasoning
  • 1 Tbsp Parsley
  • 1/2 tbsp onion salt
  • 1/2 tbsp pepper
  • 2 tbsp Mustard
  • 1 1/2 Tbsp Worcestershire Sauce

Special Tools

  • Meat grinder
  • Trimming knife

Directions

  1. Using a trimming knife, cut your brisket into 1" cube portions. This helps feed it through your meat grinder. Pro Tip: ensure your brisket is cold while passing it through your meat grinder. This helps avoid clogging your machine, and for a more consistent grind.
  1. Place all pieces into your meat grinder until all is grounded for the first round.
  1. Evenly spread your parmesan cheese, garlic, Italian seasoning, parsley, onion salt, pepper, mustard, and Worcestershire sauce onto the ground meat. Press down into it or mix slightly before running it through your meat grinder for the second time.
  1. Using a burger press or your hands, form meat into equal-sized balls and press down. Then, form into a burger shape.
  1. Optional: Refrigerate the patties for 30 minutes so all the ingredients have time to come together.
  1. Preheat your Pit Boss wood pellet grill to 250°F. Kara prefers to cook brisket burgers low to take on more smoke flavor. If you want a more hot and fast method, cook at 450°F for 4 minutes on either side. Cook until the internal temperature reaches a minimum of 145°F regardless of how you grill them. Enjoy!
