Quick and easy, these skewers are made with canned artichokes, fresh mushrooms, Italian dressing, and herbs to create the perfect grilled side. Try them as your next dinner table veggie, or prep them ahead of time before a summer BBQ.

Ingredients

  • 3 cans artichoke hearts
  • 1 lb. domestic mushrooms
  • 2 cups Italian dressing
  • 1/4 cup fresh parsley, chopped
  • 1/2 oz. fresh oregano, chopped

Directions

  1. Preheat pellet grill to 400°F.
  1. Assemble skewers by alternating mushrooms and artichokes, making sure to pierce through the thickest parts to prevent veggies from falling off.
  1. In a small bowl, combine the dressing with half of the freshly chopped herbs.
  1. Evenly coat each skewer with the herb dressing using a sauce mop, then sprinkle with BBQ rub. Allow to marinate for 10-15 minutes.
  1. Grill the skewers on the lowest grill rack until the mushrooms are cooked through, rotating as needed for even cooking.
  1. Garnish with remaining chopped herbs and serve immediately.
