Ingredients

  • 1/4 cup Balsamic Vinegar
  • 1 1/2 Tsp Salt
  • 1/4 cup chipotle puree
  • 1/2 cup water
  • Zest of one lime
  • 1 garlic clove, micro grated
  • 4 broken basil leaves “for garnish”
  • 6 cherry tomatoes cut in half “for garnish”

Directions

  1. Preheat your Pit Boss® Grill to 350°F. Once your grill reaches temp, open the sear plate and turn the temperature up to high.
  1. When flames appear through the open sear plate, start to broil the steak on all sides.
  1. Once your steak is seared on all sides, close the sear plate, and set your grill to 250°F.
  1. Next, place the steak on the top rack and smoke until you reach an internal temperature of 128-132°F.
  1. When your steak reaches the desired internal temperature, remove from the smoker and allow to rest for 5 to 10 mins before carving.
  1. Garnish with Balsamic reduction (vinegar, salt, chipotle puree, water, lime zest, garlic), broken basil, and cherry tomatoes before serving.
