Ingredients

  • 2.5 lb. whole Yukon potatoes, grated
  • 8 oz yellow onion, grated
  • 3 egg whites
  • 1/4 cup Avocado Oil
  • 1 Tbsp Salt
  • 1/2 tsp Pepper
  • 1/3 Cup Flour
  • 4 strips cooked bacon, chopped
  • Butter

Directions

  1. Mix grated onion and potatoes in a bowl, squeeze all the water from this mixture and place in a separate bowl.
  1. Add egg whites, oil, salt, pepper, flour, and bacon to the bowl and mix well Note: Seeing additional liquid in the bowl after this process is normal.
  1. Preheat your Pit Boss gas griddle to medium heat.
  1. Spread melted butter on your griddle, drop potato mixture in 10 equal portions and press flat with a griddle press or back of a spatula.
  1. Flip the cakes every 3-4 minutes until you achieve a fork tender texture. Note: you can use the corner of your spatula to check for tenderness.
  1. Top with eggs cooked just how you like. Additional toppings can be cheese, salsa, and fresh herbs. Enjoy!
