These wings are first grilled to perfection on the Pit Boss pellet grill and then coated in savory, homemade cowboy butter. In case you're wondering, cowboy butter is a compound butter made with herbs and other spices. We'll show you exactly how to make it in this recipe so you can throw it on your wings and other grilled barbecue creations. Yeehaw!

Ingredients

  • 12-16 chicken wing sections
  • Pit Boss Competition BBQ Rub
  • 1 lb. unsalted butter, softened
  • 1 bunch parsley, finely chopped
  • 1/2 oz. fresh chives, thinly sliced
  • 4 Cloves Garlic, Minced
  • Zest & juice from 1 lemon
  • 3 Tbsp Dijon Mustard
  • 2 tbsp Smoked Paprika
  • 1 Tbsp Worcestershire Sauce
  • 1 tbsp chipotle powder
  • 1 Tbs Salt
  • 1 tsp Pepper
  • 1 tbsp onion powder

Directions

  1. Preheat your wood pellet grill to 500°F
  1. Prepare your Cowboy Butter by adding butter, parsley, chives, garlic, lemon juice and zest, mustard, paprika, Worcestershire sauce, chipotle, salt, pepper, and onion powder in a bowl. Mix to combine well and set aside.
  1. In a separate bowl, coat wings in 3 tbsp oil and season with Pit Boss Competition BBQ rub. Mix until wings are evenly coated.
  1. Grill the wings until they reach an internal temperature of 165°F, about 15-18 minutes.
  1. Remove from the grill and add into a clean bowl with your homemade Cowboy Butter. Toss until evenly coated.
  1. Serve while hot!
