Try out these Cheesy Potatoes for an easy side dish this holiday season. Thinly sliced potatoes are covered in a rich cheese sauce and smoked to golden brown perfection. Throw it together for a quick addition to your seasonal celebrations or to serve alongside leftovers.

Ingredients

  • 5 medium-size Yukon potatoes
  • 2 oz Parmesan cheese, freshly grated
  • 3 oz Gruyere cheese, fresh grated
  • 3 cups heavy cream
  • 2 Garlic Cloves, Minced
  • Fresh thyme

Directions

  1. Set smoker to 400°F.
  1. Peel and thinly slice potatoes, about ½ inch thick.
  1. In a bowl, combine the heavy cream, garlic, thyme, and Pit Boss GSP Rub, then stir in the cheese until fully incorporated.
  1. Add the potatoes to the mixture and transfer to a 12-inch cast iron skillet.
  1. Place skillet in smoker and let cook for 1 hour.
  1. Let rest, then enjoy!

Recipe Note

To make this recipe even cheesier, use freshly grated cheese. This will eliminate the wax coating that many pre-shredded cheeses have.
