This recipe calls for a touch of open flame. Thankfully, Pit Boss Grills come standard with a Flame Broiler, so you can achieve direct flame searing up to 1000°F. Then, when it's time to smoke or bake, simply close the sear plate and drop the temperature low to add that steady kiss of smoke to your dish.

Ingredients

  • 10 meatballs of your choice
  • 1 can diced tomatoes
  • 1 piece of flatbread, your choice
  • 16 pieces of asparagus
  • Avocado oil
  • 1/4 cup shredded parmesan cheese
  • 1/2 oz. broken basil leaves
  • 6 cherry tomatoes cut in half

Directions

  1. First, preheat your Pit Boss to 350-400°F
  1. Next, open the sear plate and place a cast iron skillet over the open flame.
  1. Add 3 tbsp of avocado oil to the cast iron skillet, then sear the meatballs on all sides.
  1. Add the diced tomatoes, close the sear plate, and bake at 350°F for about 15 mins
  1. Next, pull the cast iron off grill, open the sear plate, and turn your grill back up to 500°F
  1. Char or grill your asparagus over the open sear plate, then set aside, and quickly toast your flatbread in the same manner.
  1. Now it’s time to plate! Start by laying the flatbread down on a plate or shallow bowl, then top with the grilled asparagus, meatballs, and cooked tomatoes.
  1. Feeling Fancy? Garnish your dish with finely grated parmesan, basil, and cherry tomatoes.
