Classic peach cobbler gets a wood-fired twist in this comfort food recipe made entirely on the pellet grill. Made with simple ingredients and with easy steps, this cobbler is perfect for an after-dinner dessert around the Holidays, or a quick summer treat.

Ingredients

  • 1/2 cup butter
  • 1 cup sugar
  • 3/4 cup flour
  • 1 tsp vanilla bean paste (or extract)
  • 1/2 tsp salt
  • 3/4 cup milk
  • 16 oz. canned peaches, drained

Directions

  1. Preheat pellet grill or smoker to 325°F.
  1. Place a stick of butter (or 1/2 cup) in a 12 inch cast iron skillet and place it on upper rack of the grill.
  1. In a medium mixing bowl, combine sugar, flour, baking powder, cinnamon, vanilla, salt, and milk.
  1. Once the butter has melted in the skillet, pour the batter evenly around the pan. Do not stir. Then, add the peaches evenly across the top of the batter. Again, do not stir.
  1. Place cast iron back on the upper rack and bake for 45 minutes to an hour, rotating the pan every 15 minutes to ensure even cooking.
  1. Once the batter has set, remove from the grill and cool for 15-20 minutes before serving.
