No holiday spread is complete without the sides! Free up some space in your oven this holiday season and make these Cinnamon Twice Baked Sweet Potatoes on your grill. Grilled sweet potato is mashed with butter, cinnamon, and nutmeg before returning to the potato skins and going back on the grill. Go the traditional route and top with marshmallows or a pecan mixture, or boss up and use candied bacon as your topping instead! Whichever you choose, you can't go wrong with this recipe.

Ingredients

  • 3 pieces Brown Sugar Bacon
  • 3 tbs Butter
  • 1 tsp Cinnamon, Ground
  • (Optional) Marshmallow, Mini
  • 1/2 tsp Nutmeg, Ground
  • 2 tbs Olive Oil
  • 3 Potato, Sweet

  • Parchment Paper
  • Fork
  • Mixing bowl

Directions

  1. Turn your grill to smoke, once the fire pot catches - preheat your grill to 400°F.
  1. Washing sweet potatoes and rub olive oil on the skins. Poke holes in the potatoes with a fork.
  1. Once grill is heated add bacon rack with brown Sugar bacon — cook 10-15 minutes
  1. Place sweet potatoes on indirect flame/heat and cook for about 50 minutes.
  1. Remove sweet potatoes and let cool.
  1. Reduce the heat to 350°F (for when you put the potatoes back on the grill).
  1. While cooling add the cinnamon, nutmeg, and softened butter into a mixing bowl.
  1. Once the potatoes have cooled enough to touch, cut them in half lengthwise.
  1. Scoop out the insides with a spoon and add them to the mixing bowl, leaving enough potato to create a boat-like shell.
  1. Mix the ingredients together and add them back into the potato skins.
  1. Top with bacon pieces or mini marshmallows if desired!
  1. Place the potatoes on a backing sheet, covered with parchment paper (to help prevent burning).
  1. Bake for 15-20 minutes, or until the tops of the marshmallows have browned.
  1. Remove from the grill and let cool briefly.
