Make delicious homemade chocolate peanut butter cookies without having to turn on your oven. These homemade chocolate cookies are filled with melty peanut butter and chocolate chips and cooked up right on the griddle. The cookies are done in just minutes, with a crunchy exterior and soft gooey interior.

Ingredients

  • 1/2 Tsp Baking Soda
  • 1/2 Cup + 1 Tbsp Butter, Unsalted
  • 2 Eggs, beaten
  • 1/3 Cup Miniature Chocolate Chips
  • 1/4 Tsp Pit Boss Smoked Hickory & Honey Sea Salt Rub
  • 1 Tsp Vanilla Extract
  • 1/2 cup brown sugar
  • 1/3 Cup Cocoa Powder, dark and unsweetened
  • 1 1/2 Cups Flour, All-Purpose
  • 2 Cups Peanut Butter Chips, divided
  • 1/2 Cup Sugar, Granulated

Directions

  1. Fire up your Pit Boss Griddle and preheat to medium-low heat. If using a gas or charcoal grill, preheat a cast iron skillet.
  1. In a mixing bowl, whisk together the flour, cocoa powder, baking soda, and Smoked Hickory & Honey Sea Salt Rub. Set aside.
  1. Set a metal saucepan on the griddle, then add ½ cup of butter to melt. Whisk in the sugars and vanilla extract and cook for 2 minutes. Remove the pan from the griddle, and transfer contents to a large mixing bowl.
  1. Slowly pour the beaten eggs into the sugar mixture, whisking constantly to temper the eggs.
  1. Add the dry mixture to the wet ingredients until just combined. Fold in 1 cup of peanut butter chips and chocolate chips. Refrigerate mixture for 15 to 30 minutes.
  1. Remove the dough from the refrigerator, then add an additional cup of peanut butter chips.
  1. Portion dough into 16 to 18 cookie balls.
  1. Melt 1 tablespoon of butter on the griddle, then transfer the cookie balls to the griddle. Press down gently on the cookies, then cook for 10 to 12 minutes, flipping halfway.
  1. Transfer cookies to a cooling rack for 5 minutes before enjoying.
