A classic sandwich gets a Mexican-style upgrade in this Brisket Birria Grilled Cheese recipe. Loaded with mozzarella and beef birria, you'll think this grilled cheese couldn't get any better. That's until you dip it into the consume, which will make you forget all about reaching for tomato soup.

Ingredients

  • 2 Slices Toast Bread
  • 1 Cup Mozzarella, Shredded
  • 1/4 Cup Cilantro, Chopped
  • 1/4 Cup Onion, Diced
  • Consomé, for dipping
  • 1 Cup Leftover Beef Birria

Directions

  1. Preheat Pit Boss griddle to medium heat.
  1. Sear beef birria for 2-3 minutes until warm.
  1. Butter one side of each slice of bread and place butter side down on the griddle.
  1. Top both slices with shredded mozzarella and one slice of bread with beef birria, diced onion, cilantro, consomé, and more mozzarella.
  1. Sear the sandwich on each side until a golden crust forms.
  1. Serve with consomé for dipping.
