Pulled pork? For breakfast? Why not! This Pulled Pork Breakfast Burrito recipe is the perfect way to finish off any leftover pulled pork. Roll it up in a tortilla with some cheese, scrambled eggs, and your choice of toppings. The options are endless!

Ingredients

  • 1/2 cup Barbecue Sauce
  • 1/2 Cup Cheddar Cheese, Shredded
  • 1 Onion, Sliced
  • 2 Cups Leftover Pulled Pork
  • 1 Tablespoon Salsa
  • 1/2 Cup Rinsed & Drained Black Beans, Can
  • 1 Cup Scrambled Egg
  • 1 Red Pepper, Strips
  • 4 Extra Large Tortilla

Directions

  1. Preheat your Pit Boss grill to 350°F. Toss the peppers and onions with Pit Boss Homestyle Pork Rub and grill until soft, about 5-7 minutes. Remove from the grill and let cool.
  1. To assemble the breakfast burritos, combine the pulled pork with the barbecue sauce, then top the tortilla with a small amount of pork, eggs, black beans, onions and pepper, shredded cheese and salsa. Roll into a burrito and repeat with the remaining burritos.
  1. Grill the burritos for 3 minutes on each side, or until the tortillas are crisp and browned. Remove from the grill and serve immediately.
