  • 12 - 14 Pancakes
  • 1/4 Cup Sugar, Granulated
  • 1 1/2 Cup Whole Milk
  • 1/2 Cup Chocolate Chips
  • Maple syrup
  • Powdered Sugar
  • 1 Tsp Vanilla Extract
  • 1 1/2 Cup Flour
  • 1 Tsp baking powder
  • 1 Tsp Sugar
  • 1/2 tsp salt
  • 1/2 Tsp Baking Soda
  • 1 1/4 Cup milk
  • 1 Egg
  • 3 Tbsp Butter, Melted
  • 1 Tbsp Vegetable Oil

Special Tools

  • Baking Pan
  • Measuring Cup
  • Mixing bowl
  • Plastic wrap

Directions

  1. Fire up your Pit Boss Platinum Series KC Combo and preheat the griddle to medium-low flame. If using a gas or charcoal grill, preheat a large cast iron skillet over medium-low heat.
  1. Lightly oil the griddle, then scoop the batter onto the griddle, using approximately ¼ cup for each pancake. Cook 1 to 2 minutes per side, until golden brown. Set aside to cool for 15 minutes, then assemble the casserole.
  1. Lightly butter a 9” round, metal baking pan. Layer the pancakes evenly in the baking pan.
  1. In a large measuring cup or bowl, whisk together eggs, milk, sugar, and vanilla. Pour over pancakes. Cover with plastic wrap, and gently press down with your hand to ensure pancakes are submerged in liquid. Refrigerate at least 2 hours, or overnight.
