Great for an Autumn dessert, breakfast, or after-school snack, these muffins are baked on the Pit Boss pellet grill, making your kitchen cleanup a whole lot easier. Packed with pumpkin puree, fresh apples, and plenty of seasonal spices so you can enjoy a fall-inspired muffin as soon as the first leaf drops.

Ingredients

  • 2 granny smith apples
  • 2 tbsp unsalted Butter
  • 1/2 tbsp cinnamon
  • 3/4 cup pumpkin puree
  • 2 eggs
  • 1 cup milk
  • 1/2 cup brown sugar
  • 2 tbsp oil
  • 1 Tsp Vanilla Extract
  • 1 tbsp pumpkin pie spice
  • 2 cups Flour
  • 1/3 cup oats

Directions

  1. Preheat your pellet grill or smoker to 350°F.
  1. Peel, core, and dice apples.
  1. Sauté apples in butter and cinnamon until softened.
  1. In a large bowl, combine pumpkin puree, egg, milk, sugar, oil, and spices.
  1. Sift in flour, a little at a time. Mix to combine, being careful not to over mix.
  1. Fold sauteed apples and oats into batter.
  1. Scoop into muffin pan with liners. Sprinkle each with a pinch of oats.
  1. Bake in your preheated grill for 25-30 minutes, or until a toothpick can be inserted and removed with no residue.
