Peppermint Marshmallow Brownies

Everyone knows brownies are better when baked to gooey perfection on the Pit Boss pellet grill. This time, add crushed peppermints and marshmallow for a treat that's great for a Holiday side dish or a late night dessert.

Ingredients

  • 1 18.3 oz. box fudge brownie mix
  • 10 crushed peppermint sticks
  • 3/4 cup mini marshmallows
  • Caramel Sauce

  • Toothpicks

Directions

  1. preheat pellet grill or vertical smoker to 325°F. Grease the cast iron and place on grill to preheat.
  1. Make brownie mix according to box instructions, then fold in marshmallows.
  1. Using a sifter, sift the crushed peppermint to separate out the smaller granules. Add the small granules into the brownie mix and fold.
  1. Remove the heated cast iron from the grill and add the brownie mixture.
  1. Place the cast iron back on the grill and allow to bake for 10 minutes
  1. Add the larger pieces of peppermint to the top of the brownies, then continue to bake for another 8-15 minutes - depending on box's recommended cooking time.
  1. Insert a toothpick into the center of the brownie to check for doneness. Continue to bake until no batter residue sticks to the toothpick.
  1. Once done, allow to cool to room temperature before topping with salted caramel and serving.
