There's regular cornbread, and then there's Pit Boss Cornbread. Baked in a wood pellet grill or smoker, our version has a bit of wood-fired flavor that makes it stand out from the rest. Fuel up with our Fruitwood Blend Hardwood Pellets for just the right touch of smoky flavor.

Ingredients

  • 1 cup flour
  • 1 cup cornmeal
  • 2 Tsp Baking Powder
  • 1/2 Tsp Baking Soda
  • 1 1/4 Cup milk
  • 2 Eggs
  • 1/2 Cup Sour Cream
  • 1/4 cup honey – depending on how sweet you want it
  • 1/2 cup melted butter

Directions

  1. Pre-heat smoker to 350°F.
  1. Place the cast iron skillet in the smoker away from heat source while the smoker reaches temperature.
  1. In a large bowl, whisk together the flour, cornmeal, baking powder, baking soda, and Pit Boss GSP Rub.
  1. Then add the milk, eggs, sour cream, honey, and melted butter. Mix everything together well until it is mostly smooth, but do not overmix.
  1. Carefully remove the hot cast iron from the smoker. Pour the batter into the cast iron, then place cast iron back into smoker.
  1. Let it cook for 30 to 35 minutes, or until it is totally set and golden brown on top.
  1. Remove from smoker and let rest for 15 minutes, then enjoy!
