With a serrated knife, make three small incisions into the top of the breasts. Next, apply a gentle touch of olive oil and Pit Boss Mandarin Habanero seasoning and let chill for 30 minutes.
Fill your hopper with your choice of pellets (we chose Competition Blend), preheat your grill to 350°F and barbecue your chicken breasts for 30 minutes. Next, place a slice of cheddar cheese on top of each breast.
Heat for another 5-10 minutes or until the cheese has fully melted into the incisions you made earlier. Remove and serve for a tender chicken breast with a spicy kick and hot cheesy center. You'll receive too much credit for a recipe this easy.
