These seasonal veggie skewers feature summer squash, peppers, onions, and mushrooms, and can be served alongside your favorite proteins all summer long. Cooked over smoldering embers on the Pit Boss Cowboy Fire Pit, these veggies take on just the right amount of wood-fired flavor. Trust us, you're going to love these. 

⏰Before you start: We recommend using vegetables of equal thickness and like texture on your skewers. You'll notice we put the mushrooms on a separate skewers to avoid overcooking with the other veggies.

đŸ”„Cooking Method: If you're grilling these skewers on the Cowboy Fire Pit, we've got a few handy tricks. The fuel you use is up to you, but we used lump charcoal for this recipe. Once you light the fire, let it burn for around 15 to 20 minutes to develop the embers you’ll want to cook over. Then, you're ready to get grilling!

Ingredients

  • 4 summer squash (gold squash, zucchini, or mix of both)
  • 2 red bell peppers
  • 1 red onion
  • 1 lb. domestic whole mushrooms
  • 1 15 oz. bottle of Italian dressing or similar Vinaigrette
  • 1/4 cup chopped mixed herbs of choice (oregano, parsley, thyme)

Special Tools

  • 12 inch bamboo skewers

Directions

  1. Clean your mushrooms with a soft basting brush to remove any dirt before placing on skewers.
  1. Slice the squash into 1 inch thick rounds and set aside.
  1. Largely dice the red onion and red bell peppers and set aside.
  1. In a revolving order, place your vegetables on the skewers. Note: Keep your thicker-cut vegetables on the ends to keep the skewers in tact during the cooking process.
  1. Place your skewers on a shallow pan or cookie sheet.
  1. Using your dressing of choice, coat the skewers evenly, season with salt and pepper, and sprinkle with chopped herbs. Allow to sit for 15 minutes.
  1. Grill your skewers over medium-high to high heat, making sure to turn them as they color.
  1. After about 15 minutes, remove from the grill and allow to sit for 5-7 minutes before serving.
