A Platinum Brunch with Chef Shaun O’neale



New Pit Boss Partner Chef Shaun O'Neale (Masterchef Season 7 Champion Chef & Author of My Modern American Table) serves up a Platinum-style Brunch on his Pit Boss Platinum KC Combo Grill. The Platinum Series KC Combo represents The Next Chapter in BBQ with new features and endless cooking options. Chef Shaun created a feast utilizing all aspects of the grill including the pellet grill and gas grill combination.



The Platinum Brunch: Prosciutto Eggs Benny w/ Spinach Hollandaise, Buttermilk Pancakes with Smoked Amaretto Syrup and Crispy Hash Browns

This Platinum Brunch will take roughly 90 minutes to prepare and cook and serves 6 to 8 people.

Ingredients

Spinach Hollandaise


  • 2 tbsp Olive Oil
  • 1 Shallot, minced
  • 2 Cloves Garlic, minced
  • 2 cups Spinach, packed tightly
  • 1 cup Water, divided
  • Juice and Zest of 2 Lemons
  • 4 Egg Yolks
  • 1 cup Butter, melted
  • 1 tsp Cayenne
  • Salt and Pepper, to taste

Prosciutto Eggs Benny


  • 4 English Muffins, cut in half and toasted
  • 2 tbsp Butter
  • 10 slices of Prosciutto, divided
  • 8 Eggs, soft boiled, sous vide or fried
  • Small Parsley Leaves, for garnish

Buttermilk Pancakes

  • 1 tsp Salt
  • 2 tsp Baking Powder
  • 1 tsp Baking Soda
  • 2 cups Sifted AP Flour
  • 2 tbsp Sugar
  • 1 tsp Cinnamon
  • 1/2 tsp Allspice
  • 2 Eggs, slightly beaten
  • 2 cups Buttermilk
  • 2 tbsp Unsalted Butter, melted and cooled

Smoked Amaretto Syrup

  • 2 cups Amaretto
  • 1/2 cup Good Quality Maple Syrup

Crispy Hash Browns

  • 4 Russet Potatoes, large
  • 3 tbsp Vegetable Oil
  • Salt & Freshly Ground Pepper, to taste


Cooking Instructions


Start by cooking the Smoked Amaretto Syrup as it will take the longest time on the grill.


To make the Smoked Amaretto Syrup

  1. Place the amaretto in a saucepan and cook on the stove over high heat until reduced by half and a syrup consistency has formed.
  2. Place the syrup in a shallow flat-bottomed dish and combine with the maple syrup.
  3. Set your Pit Boss Platinum KC Combo to the SMOKE setting.
  4. Smoke the syrup heavily for at least 1 hour. Serve

To make the Spinach Hollandaise

  1. In a large pan add the olive oil over medium heat, add the shallot and cook until translucent, add the garlic and cook until fragrant. Add the spinach and cook until it begins to wilt, add 1/2 cup of the water and cook until the spinach is completely wilted. Remove from the pan and place in paper towels, squeeze out as much of the moisture as possible.
  2. Place the spinach in a blender and use just as much of the remaining 1/2 cup of water as needed to make a smooth puree. Set aside until needed.
  3. Set up a double boiler over medium heat.
  4. Add the lemon juice and zest along with the egg yolks and cook in the double boiler, stirring constantly and removing the bowl from the heat if it starts to get too hot. When the eggs begin to thicken add the spinach puree and continue whisking until you start to see ribbons in the hollandaise, slowly add the butter stirring constantly in a slow stream. Once thickened remove from the heat and season with the cayenne, salt and pepper.

To make the Prosciutto Benny

  1. Using the flat top of the Pit Boss Platinum KC Combo set to medium high heat, spread the butter edge to edge on the English muffins and toast them to golden brown on the flat top.
  2. Place 2 slices of the prosciutto on the flat top to crisp, once crisp remove to a paper towel lined plate and reserve for plating.
  3. Once the muffins are toasted place them on a plate or platter and place one piece of prosciutto on each piece, folding the prosciutto around the muffin to make a meat nest for the egg.
  4. Sous vide, poach or fry your egg so you have a runny yolk, but the whites are fully set. Place the egg on top of the prosciutto and pour the hollandaise over each piece.
  5. Top with the crumbled crispy prosciutto and the parsley leaves.


To make the Buttermilk Pancakes

  1. Combine the salt, baking powder, baking soda, AP flour, sugar, cinnamon and allspice in a bowl and whisk well to combine.
  2. In a separate bowl whisk together the eggs, buttermilk and butter.
  3. Combine the wet and dry mixtures and mix well until fully combined and no lumps remain.
  4. Melt 1/4 cup butter (use more as needed) on the flat top of the KC Combo.
  5. Using a ladle pour out enough batter to make pancakes your desired size.
  6. Repeat the process until all the pancakes are cooked. Serve hot.

To make the Crispy Hash Browns

  1. Using a box grater, grate the clean skin on potatoes on the largest hole.
  2. Place the potatoes in cold water to keep from oxidizing.
