Directions

  1. Melt butter in a small saucepan over medium heat.
  2. Whisk in flour and cook for about 1 minute - until the mixture is golden.
  3. Whisk in pan drippings. (If you have more than a cup, use it and reduce the amount of broth!)
  4. Bring mixture to a boil and simmer gently until the it has thickened slightly.
  5. Stir in fresh herbs.
  6. Whisk in 1 cup of broth and return mixture to a simmer.
  7. Season with salt and pepper (to taste).
  8. Simmer for 10 minutes - gradually add more stock if the gravy is too thick.
