Sweet Potato Medley

8-10 Brussels Sprouts

2-3 tablespoons Olive Oil

1/2 Sweet White softball sized white Onion

1 Red Bell Pepper

Pit Boss Lemon Pepper Garlic Seasoning

2 Sweet Potatoes, Scrubbed

    1. Prep:
    2. Slice the sweet potatoes, and then cut them into quarters. Slice the onion, Anaheim pepper and bell pepper. Be sure to make these slices big enough that they won’t fall though the holes in your Pit Boss Grilling Basket. Cut the brussels sprouts vertically, stems at the bottom, in 1/2 or 1/3’s depending on their size.

    3. Add the sweet potatoes to your grilling basket. Drizzle olive oil, enough to cover the potatoes, but not enough to drown them. Sprinkle with Pit Boss Lemon Pepper Garlic seasoning (to taste), and toss again.

    4. Toss or mix the additional vegetables in a bowl, and drizzle olive oil over these as well so they are evenly covered with the olive oil. Set aside.

    1. Preheat your grill to 450F.

    2. Place the sweet potatoes on the grill, (indirect flame heating). Your Medley will take 45-50 minutes depending on the thickness of your potatoes.

    3. Every 15 minutes, go out to your Pit Boss Grill and toss/mix the potatoes. After 30 minutes, add the rest of the vegetables to the potatoes and toss - so that the Medley cooks evenly.

    4. When finished, remove the vegetables from the grill, and add them to a serving bowl. Serve hot, and chow down!
