Ingredients


2 Tsp Baking Powder

2 Cups Buttermilk, Low Fat

1/2 Cup Cornmeal, Yellow

2 Egg

1 1/2 Cups Flour, All-Purpose

16 oz Pimento Cheese Spread

2 Tbsp Pit Boss Bacon Cheddar Seasoning

To Taste, Smoked Salt & Cracked Pepper Rub

1/4 Cup Sugar

For anyone looking for the perfect snack for race day, this recipe is for you! Taken straight from the shop crew over at Kaulig Racing, this Skillet Pimento Cheese Cornbread takes classic cornbread ingredients and mixes them with pimento cheese and Bossin’ seasonings before being baked on the grill inside a cast iron skillet. The result is a smoky, savory cornbread with a beautifully charred crust that only cooking in cast iron can deliver.

Note: It is recommended to use Competition Hardwood Pellets with this recipe.

This recipe uses Smoked Salt & Cracked Pepper Seasoning.

  1. Preheat the grill to 350°F. Place a cast iron skillet in the grill to preheat.
  2. In a bowl, mix together the eggs, buttermilk, Bacon Cheddar Seasoning, and pimento cheese spread. Add in the sugar, baking powder, cornmeal and flour. Mix until well combined.
  3. With cooking gloves, carefully remove the cast iron skillet from the grill, grease it, and add the cornbread batter.
  4. Grill for 25-30 minutes, or until the cornbread is golden and pulling away from the edges of the skillet.
