Jalapeno poppers, step aside. These bacon-wrapped pickles are sure to be a hit at your next party. Low-carb and keto-friendly, dill pickle spears are halved and stuffed with ground bratwurst and a smooth cream cheese filling, then wrapped up in bacon. The pickle poppers are crisped up on the pellet grill until golden, smoky and gooey. The perfect appetizer for those who prefer tangy flavors over spicy heat.

Ingredients

  • 13 strips Bacon
  • 3 Bratwursts, Raw
  • 1/2 cup Colby Jack Cheese, Shredded
  • 4 oz Cream Cheese
  • 13 large Dill Pickles, spears
  • 2 Scallions, sliced thin
  • 1/4 cup Sour Cream

Special Tools

  • Hand Mixer
  • Metal baking sheet
  • Mixing bowl

Directions

  1. Fire up your Pit Boss Platinum Series KC Combo and preheat grill to 375°F.
  1. Preheat griddle to medium- low flame.
  1. In a mixing bowl combine cream cheese, sour cream, Pit Boss Smoked Salt & Pepper Rub, and scallions.
  1. Use a hand mixer to blend well, then fold in grated cheddar-jack. Set aside.
  1. Cook bratwurst on the griddle. Use a metal spatula to chop up sausage into smaller bits and cook until browned.
  1. Remove from the griddle and set aside on a sheet tray to cool.
  1. Place pickles on a sheet tray. Cut in half, then remove seeds with a small measuring spoon.
  1. Stuff one half of each pickle with cream cheese mixture and top with crumbled bratwurst.
  1. Top with the other pickle half, then wrap in bacon.
  1. Season bacon-wrapped pickles with Hickory Bacon Rub, place in cast iron skillet, then transfer to grill.
  1. Grill pickles for 45 to 55 minutes, until bacon starts to crisp on top. Remove from grill. Serve warm.
