North meets South in this mouthwatering Canadian-inspired Pulled Pork Poutine. Crispy French fries are loaded up with classic Pit Boss Pulled Pork, creamy cheese curds, and a homemade BBQ sauce-infused gravy. Enjoy as a game day app or dinner-- either way, it’ll be a touchdown with the whole crew.

Wood Pellet Recommendation

In order to create a delicious contrast between the pulled pork and the other flavors in this recipe, we recommend using our Apple Blend Hardwood Pellets.

Tip: This recipe uses Pit Boss Grills Pulled Pork Rub Seasoning.

  1. Fire up your Pit Boss pellet grill on SMOKE mode and let it run with lid open for 10 minutes then preheat to 225° F. If using a gas or charcoal grill, set it up for low, indirect heat.
  2. Season the pork shoulder with a pork rub, then transfer to the grill grate, fat side up. Smoke the pork shoulder for 2 ½ hours.
  3. Add chicken stock, vinegar, and sliced onion to a Dutch oven. Transfer the smoked pork shoulder to the Dutch oven, then cover and increase the grill temperature to 325° F. Braise the pork shoulder for 1 ½ hours, until tender.
  4. When tender, remove the pork from the grill and rest for 20 minutes, then shred.
  5. While the pork is resting, prepare the gravy: set a cast iron skillet on the grill. Heat the butter and olive oil in the skillet, then sauté the onion and garlic for 2 minutes, stirring often. Stir in the flour and cook for 1 minute. Slowly add the beef stock, and stir until thickened. Add bbq sauce and simmer for 3 minutes. Remove from the grill and set aside for assembly.
  6. Assemble the poutine: spread out a layer of French fries, then layer gravy, pulled pork, cheese curds, additional gravy, and scallions. Serve warm.
