Trust us on this one, these Peanut Butter and Jelly Chicken Wings are the unexpected flavor combo you'll wish you had discovered sooner. Irresistibly savory, sweet and spicy, the PB and J wings are marinated in a mixture of strawberry jam, peanut butter, honey and spicy Thai chili sauce. Grill them up until the skin crisps and caramelizes then top them off with a crunchy coating of whole grilled peanuts.

Ingredients

  • 1 tsp Black Peppercorns, Ground
  • 4 Lbs Chicken Wings, Trimmed and Patted Dry
  • 1/4 cup Peanut Butter
  • 1/2 cup Strawberry Preserves
  • 1/4 Cup Worcestershire Sauce
  • 2 tbsp Brown Sugar
  • 2 Tbsp Honey
  • 10 oz Peanuts, Whole
  • 1/2 Red Onion, minced
  • 1 tbsp Thai Chili Sauce

  • Mixing bowl
  • Resealable plastic bag
  • Rolling Pin

Directions

  1. Place chicken wings in a 9x13 glass baking dish. Pour mixture over chicken, cover with plastic wrap, and refrigerate for 2 hours.
  1. Fire up your Pit Boss Platinum Series KC Combo and preheat grill to 400° F. Preheat griddle to medium-low flame. If using a gas or charcoal grill, set it to medium-high heat.
  1. Place wings directly on grill grate, over indirect heat, and cook for 20-25 minutes, rotating wings every 5 minutes.
  1. Meanwhile, place shelled peanuts on the griddle, turning occasionally with a metal spatula for 5-7 minutes, to lightly roast. Remove from the griddle and set aside to cool.
  1. Remove wings from grill and allow to rest for 5 minutes. While wings are resting, shell the peanuts, and transfer to a resealable plastic bag. Use a rolling pin to crush the peanuts, then scatter peanuts on top of the chicken wings. Serve warm.
