This Potato-Crusted Corn on the Cob, also known as "American Street Corn," is perfect for those late night summer BBQs. Serve it on the side or as the main event, but either way, your friends and family will be coming back for more.

Ingredients
8 ears of corn
2 cans of cream of chicken, diluted per instructions. Yeild: 32 oz.
1/2 oz. fresh thyme
1/2 oz. fresh chives, thinly sliced

Oven-safe casserole dish
Directions
Preheat your grill or smoker to 350°F
In baking dish, add raw corn and diluted cream of chicken.
Place your pan of corn on the center shelf of your grill.
Rotate the corn every 15 mins until soft, the cream of chicken should thicken during this process.
In a separate pan, mix fresh herbs with instant mashed potatoes and mix well.
Remove the corn from grill and roll each ear of corn into the potato mixture.
