Not sure what to do with leftover smoked or grilled chicken? Throw together these Loaded Chicken Nachos for a quick sheet pan appetizer that's perfect for having friends over, game day, or just a snack anytime. Layers of tortilla chips are topped with cooked chicken, cheese, and seasoning before going on the grill. Once it gets all melted and bubbly, pile on your favorite toppings, like sliced jalapenos, black beans, and sour cream. The options are endless!

Ingredients

  • 1 can Black Beans, Rinsed and Drained
  • 2 Cups Chicken, Diced
  • 1 can Corn Kernels, Drained
  • 1/2 Red Onion, Diced
  • 1/2 Cup Salsa
  • 1 Cup Cheddar Cheese, Shredded
  • 1/4 cup Sour Cream

Directions

  1. On a large sheet pan, spread out half the tortilla chips, then cover with half the shredded cheese and one cup of chicken. Sprinkle with half of Pit Boss Chicken & Poultry Rub. Top with the rest of the tortilla chips, cheese, chicken and remaining seasoning.
  1. Turn your Pit Boss Grill to 350° F. Grill for 5-7 minutes, or until the cheese is melted and bubbly and everything is warmed all the way through. Remove the pan from the grill.
  1. Top the nachos with the black beans, corn, diced red onion, sour cream, cilantro and pickled jalapeños.
