Ingredients

2 tbsp Bacon, Chopped

1 Teaspoon Baking Soda

3 Medium Banana, Very Ripe

1/2 Cup Brown Sugar

1/3 Cup Buttermilk, Low Fat

2 - 3 Tablespoons Chocolate Chips

1 Egg

1 1/2 Cups Flour, All-Purpose

Maple Syrup

1 Teaspoon Salt

1/2 Cup Sugar, Granulated

2 Tablespoons Walnut, Chopped

Cooking Instructions

  1. Preheat your to 350 degrees

  2. Mash bananas with fork in a large bowl. Whisk together egg, milk, granulated sugar, and brown sugar.

  3. In separate bowl, combine flour, baking soda, and salt. Add the flour mixture to banana mixture and combine well. Fold in chocolate chips.

  4. Place muffin liners in a muffin tin. Spoon equal amounts of batter into 12 muffin cups.

  5. Bake for 20 minutes or until toothpick inserted in center comes out clean. Allow to cool slightly in pan, then remove to wire rack.

  6. Top with walnuts, bacon, and drizzle with maple syrup.
