There's something to be said about harvesting your own meat and then cooking up something like elk steaks on the grill for your friends and family. A certain amount of pride can be had for procuring some of the healthiest meat on the planet and providing it for those you love and care about. Some people can be intimidated to cook wild game like elk, at least for their friends for fear that the meat might turn out a little too gamey.

Wild game meat doesn't have to be intimidating! As long as you took the proper steps when processing your animal, elk easily can be made at home on the grill, yielding tender, delicious results with your Pit Boss grill. Make sure to always use an oil-based marinade with elk, as too much acid will make the meat tough.

Ingredients

  • ¼ Cup Brown Sugar
  • 2 Tsp Pit Boss Smoked Salt & Pepper Rub
  • 1/2 Cup Olive Oil
  • 1/2 Cup whiskey, such as Jack Daniel’s
  • 4 Elk Steaks
  • 1/2 cup Soy Sauce
  • ¼ Cup Yellow Mustard

Special Tools

  • Mixing Bowl
  • Resealable plastic bag
  • Tongs

Directions

  1. In a large mixing bowl, add the whiskey, soy sauce, olive oil, brown sugar, yellow mustard, and Pit Boss Chophouse Steak Rub to a large mixing bowl and whisk until everything is well combined. Pour the marinade into a large, resealable plastic bag or glass baking dish, then add the elk steaks. Seal the bag and turn the steaks once to coat. Place the bag in the refrigerator and marinate for 4-12 hours.
  2. Fire up your Pit Boss grill and set the temperature to 425°F. If you're using a gas or charcoal grill, set it up for medium heat. Remove the elk steaks from the bag and discard the excess marinade. Insert a temperature probe into one of the elk steaks and place on the grill.
  3. Grill the steaks for 7-10 minutes per side, or until the steaks reach an internal temperature of 135°F. Remove the steaks from the grill and allow the steaks to rest for 10 minutes before serving.
