Ingredients


2 tsp Annatto powder

Cilantro, Chopped

Corn Tortillas

2 tsp Cumin

1 tsp Granulated Garlic

2 tbsp Guajillo Chili Powder

Jalapeno Pepper, minced

Lime, Wedges

1 tsp Oregano, dried

1/2 tsp Pepper

1/2 cup Pineapple, Juice

1/2 Pineapple, skinned & cored

2 lbs Pork Shoulder, boneless, sliced thin

1 1/2 tsp Salt

2 tbsp Tomato Paste

2 tbsp Vegetable Oil

1/4 cup White Vinegar

Yellow Onion, chopped



Cooking Instructions


Meet the most flavorful pork tacos you’ll ever try. In this recipe, get authentic grilled Tacos Al Pastor by marinating the pork overnight in a pineapple and guajillo chili-based sauce, then grill up until the sauce caramelizes and slightly chars. Serve with sweet grilled pineapple or any other fresh toppings. 

What are Tacos Al Pastor? 

Similar to Middle Eastern shawarma, Tacos Al Pastor are thinly sliced pieces of marinated pork that are grilled over a spit. 

Wood Pellet Recommendation 

The sweetness of our Apple Blend hardwood pellets make it a great choice for this recipe.  

  1. Prepare marinade: In a mixing bowl, whisk together pineapple juice, vinegar, oil, tomato paste, chili powder, annatto, cumin, granulated garlic, oregano, salt, and pepper.  Set aside.
  2. Slice pork shoulder into thin slices (around ¼” thick), then place in a resealable plastic bag. Pour marinade over pork, seal bag, and turn to coat. Refrigerate overnight.
  3. Fire up your Pit Boss grill and preheat to 450° F. If using a gas or charcoal grill, set it up for high heat.
  4. Remove the pork from the marinade and set on the grill. Grill over high heat for 3 to 5 minutes, turning frequently. Transfer to a cutting board to rest for 10 minutes, then slice thin.
  5. Grill pineapple for 3 minutes, turning once.  Set aside on a cutting board, and chop once cooled.
  6. Assemble tacos: tortillas, pork, pineapple, jalapeño, onion, and cilantro. Serve warm with fresh lime wedges.

If cooking with a vertical smoker or Lockhart, try stacking the pork shoulder meat on a half large onion using a skewer. Smoke it for 90 minutes on Smoke mode before charring on the grill.
