Ingredients


1 tbsp Cracked Black Pepper

1/2 tbsp Granulated Garlic

1/2 tbsp Granulated Onion

2 tbsp Kosher Salt

1 tbsp Olive Oil

2 tsp Oregano, dried

1/2 tbsp Parsley, dried

5 1/2 lbs Prime Rib Roast, bone-in

2 tsp Smoked Paprika



Cooking Instructions


No holiday feast is complete without a perfectly tender Standing Rib Roast. The king of all beef cuts, this prime rib is given the Boss treatment when rubbed in a savory herb crust then smoked low and slow for a kiss of wood-fired flavor. Roast on high for the final few minutes to render the fat and crisp the crust, then slice into a perfectly moist and rare roast fit for a king.

Wood Pellet Recommendation

In order to bring out some extra, tangy flavors in this delicious recipe, we recommend using our Mesquite Hardwood Pellets.

  1. Place the roast in a glass baking dish. In a small mixing bowl, combine the salt, pepper, granulated garlic, granulated onion, parsley, oregano and smoked paprika. Season the entire roast with the spice blend, then cover and refrigerate overnight.
  2. One hour prior to cooking, remove roast from the refrigerator, uncover, and let it sit out at room temperature.
  3. Fire up your Pit Boss pellet grill on SMOKE mode and let it run with lid open for 10 minutes then preheat to 225° F. If using a gas or charcoal grill, set it up for low, indirect heat.
  4. Place seasoned roast on a cast iron skillet, drizzle with olive oil, and transfer to the grill. Smoke the roast for 1 hour 45 minutes, or until internal temperature reaches 120° F. Remove from the grill and allow roast to rest for 15 minutes.
  5. Increase the grill temperature to 450 F, then return roast to grill for an additional 10 to 15 minutes. Allow roast to rest for 15 minutes, slice and serve warm.
