Cooking Instructions

Elevate Taco Tuesday with these homemade corn tortillas. Made with traditional masa harina, homemade tortillas have better flavor and texture than any store bought version. Once the dough is prepared, the tortillas are pressed then given a quick sear on the griddle side of the Pit Boss Platinum Series KC Combo. Fill with pork carnitas, carne asada, or ground meat and all your favorite toppings!

How to Make Homemade Corn Tortillas 

  1. In a large mixing bowl, mix together masa and hot water. Mix with a wooden spoon or by hand. Cover with plastic wrap and allow to sit at room temperature for 1 hour. 
  2. Turn out the dough. Dough will be crumbly. Incorporate 1 tablespoon of water at a time, while kneading and pressing together, until a soft, smooth texture is reached.  If too sticky, add a dusting of Masa. 
  3. Divide dough into 1 ounce balls, then spray with cooking spray. 
  4. Place a piece of parchment paper on a tortilla press. Set a dough ball in the center, then top with another piece of parchment paper. Flatten dough ball with the press, then transfer to a sheet tray. Separate each layer with plastic wrap and spray with cooking spray. Repeat until all dough balls are pressed. 
  1. Fire up your KC Combo Grill and preheat the griddle over medium-low flame, then lightly grease with vegetable oil. If using a gas or charcoal grill, preheat a cast iron skillet over medium-low heat.
  2. Place tortillas on griddle, and cook 15 to 30 seconds per side. Transfer to a plate, and cover with a flour sack towel to keep warm. Repeat until all tortillas are cooked. Serve warm.
